Avocado Toast with Scrambled Eggs
Ingredients
- Tenayo Spicy Al Pastor Barbecue Sauce
- 1 ripe avocado
- extra virgin olive oil
- salt and pepper, to taste
- 2 slices sourdough bread, toasted
- 1 tablespoon butter
- 4 eggs, scrambled
- cotija, crumbled
Instructions
- In a small bowl, mash the ripe avocado with a fork. Season with a drizzle of extra virgin olive oil and salt and pepper to taste.
- Toast the sourdough bread and spread it with the mashed avocado.
- In a non-stick skillet, heat butter over medium heat.
- Crack the eggs into a bowl, whisk lightly with a fork, and pour into the skillet. Stir the eggs gently with a spatula until they are just set but still moist. Remove from heat immediately to avoid overcooking, and spoon onto the prepared toast.
- Drizzle Tenayo Spicy Al Pastor Barbecue Sauce over the scrambled eggs.
- Sprinkle crumbled Cotija cheese on top.
- Serve immediately while the toast and eggs are still warm. Enjoy as a hearty breakfast or brunch dish!
