Avocado Toast with Scrambled Eggs

Ingredients

  • Tenayo Spicy Al Pastor Barbecue Sauce
  • 1 ripe avocado
  • extra virgin olive oil
  • salt and pepper, to taste
  • 2 slices sourdough bread, toasted
  • 1 tablespoon butter
  • 4 eggs, scrambled
  • cotija, crumbled

Instructions

  1. In a small bowl, mash the ripe avocado with a fork. Season with a drizzle of extra virgin olive oil and salt and pepper to taste.
  2. Toast the sourdough bread and spread it with the mashed avocado.
  3. In a non-stick skillet, heat butter over medium heat.
  4. Crack the eggs into a bowl, whisk lightly with a fork, and pour into the skillet. Stir the eggs gently with a spatula until they are just set but still moist. Remove from heat immediately to avoid overcooking, and spoon onto the prepared toast.
  5. Drizzle Tenayo Spicy Al Pastor Barbecue Sauce over the scrambled eggs.
  6. Sprinkle crumbled Cotija cheese on top.
  7. Serve immediately while the toast and eggs are still warm. Enjoy as a hearty breakfast or brunch dish!
