Queso Loaded Tots

Ingredients

  • Tenayo Al Pastor BBQ Sauce, for smothering
  • 1 bag tater tots
  • 2 cups of your favorite queso

For the Quick Pico:

  • 1 tomato, diced
  • ¼ cup cilantro, chopped
  • 2 green onions, thinly sliced
  • 1/4 red onion, finely diced
  • 1 jalapeño, seeded and finely diced

Instructions

  1. Preheat the oven to 400F. Spread the tater tots in a single layer on a baking sheet and bake according to the package instructions, usually for about 20-25 minutes, until they are golden brown and crispy. 
  2.  While the tater tots are baking, prepare the pico. In a medium bowl, combine the diced tomato, chopped cilantro, green onions, red onion, and jalapeño. Toss everything together until well mixed and set aside.
  3. During the last minute or two of the tater tots cooking, warm the queso either in the oven or a small saucepan. 
  4. Once the tater tots are baked, remove them from the oven and transfer them to a serving dish. Pour the warm queso evenly over the tater tots, sprinkle with the prepared pico, and smother generously with Tenayo Al Pastor BBQ Sauce
  5. Serve immediately while they’re still hot and crispy. These tater tots make a perfect shareable appetizer or a decadent treat for yourself!
