Ingredients
- Tenayo Al Pastor BBQ Sauce, for smothering
- 1 bag tater tots
- 2 cups of your favorite queso
For the Quick Pico:
- 1 tomato, diced
- ¼ cup cilantro, chopped
- 2 green onions, thinly sliced
- 1/4 red onion, finely diced
- 1 jalapeño, seeded and finely diced
Instructions
- Preheat the oven to 400F. Spread the tater tots in a single layer on a baking sheet and bake according to the package instructions, usually for about 20-25 minutes, until they are golden brown and crispy.
- While the tater tots are baking, prepare the pico. In a medium bowl, combine the diced tomato, chopped cilantro, green onions, red onion, and jalapeño. Toss everything together until well mixed and set aside.
- During the last minute or two of the tater tots cooking, warm the queso either in the oven or a small saucepan.
- Once the tater tots are baked, remove them from the oven and transfer them to a serving dish. Pour the warm queso evenly over the tater tots, sprinkle with the prepared pico, and smother generously with Tenayo Al Pastor BBQ Sauce
- Serve immediately while they’re still hot and crispy. These tater tots make a perfect shareable appetizer or a decadent treat for yourself!
