Scalloped Potatoes with Canadian Bacon

Ingredients

  • ½ cup Tenayo Poblano Barbecue Sauce
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 ½ cups shredded sharp cheddar cheese
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 4 medium Yukon Gold potatoes, thinly sliced
  • 1 cup Canadian bacon, diced
  • 1 medium onion, thinly sliced
  • roasted red pepper, diced, for garnish (optional)

Instructions

  1. Preheat the oven to 350F. Grease a 9x13-inch baking dish. Peel and thinly slice potatoes, using a mandoline or sharp knife, then set aside.
  2. In a medium saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Whisk in the flour, stirring constantly for about 1 minute to form a roux.
  3. Gradually whisk in the milk, continuing to stir until the sauce thickens, about 3 to 4 minutes. Stir in shredded cheddar cheese, followed by Tenayo Poblano Barbecue Sauce. Mix until smooth. Season with salt and pepper and adjust to taste.
  4. In the greased baking dish, layer half of the sliced potatoes evenly. Top with half of the diced Canadian bacon and half of the sliced onions. Pour half of the barbecue cheese sauce over the layer.
  5. Add the remaining potatoes, Canadian bacon, and onions, and pour the rest of the sauce on top.
  6. Cover the baking dish with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and golden on top.
  7. Remove from the oven and let it cool for a few minutes before slicing and serving. Garnish with roasted red peppers if desired and enjoy!
