Shrimp Fajita with Mole Rojo Sauce
Ingredients
- ½ cup tenayo Mole Rojo sauce
- ½ lb raw shrimp no tail and deveined
- 1 red onion
- 1 red bell pepper
- 1 green bell peppers
- 2 tablespoons Butter
- ¼ cup pickled red onion
- Flour tortilla
- Jalapeno, for garnish
- Cilantro, for garnish
- Avocado
Pickled red onion
- 2 red onions
- 1 cup red wine vinegar
- 1 cup water
- 1 cup sugar
- 1 tablespoon salt
- 1 tablespoon peppercorn
Instructions
- Start by marinating shrimp in Tenayo Mole Rojo Sauce, place in a mixing bowl, and cover in the fridge for at least 2 hours.
- Thinly slice onion and peppers.
- Heat a large skillet over medium heat and add butter; once butter is hot, add sliced vegetables.
- Once the vegetables are soft, add the marinated shrimp and cook for another 4 minutes or until the shrimp is cooked.
- Warm tortillas on the grill or stovetop.
- Garnish with fresh lime, onions, and avocado.
