Ingredients

  • ½ cup tenayo Mole Rojo sauce 
  • ½ lb raw shrimp no tail and deveined 
  • 1 red onion 
  • 1 red bell pepper
  • 1 green bell peppers 
  • 2 tablespoons Butter 
  • ¼ cup pickled red onion 
  • Flour tortilla 
  • Jalapeno, for garnish 
  • Cilantro, for garnish
  • Avocado


Pickled red onion 

  • 2 red onions 
  • 1 cup red wine vinegar
  • 1 cup water 
  • 1 cup sugar 
  • 1 tablespoon salt
  • 1 tablespoon peppercorn

Instructions

  1. Start by marinating shrimp in Tenayo Mole Rojo Sauce, place in a mixing bowl, and cover in the fridge for at least 2 hours. 
  2. Thinly slice onion and peppers.
  3. Heat a large skillet over medium heat and add butter; once butter is hot, add sliced vegetables. 
  4. Once the vegetables are soft, add the marinated shrimp and cook for another 4 minutes or until the shrimp is cooked. 
  5. Warm tortillas on the grill or stovetop.
  6. Garnish with fresh lime, onions, and avocado.
