Spicy Pumpkin Parfait

Ingredients

  • ¼ cup Tenayo Mole Rojo Sauce, plus extra for garnish
  • 8 oz cream cheese, softened to room temperature
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup heavy whipping cream
  • ⅓ cup powdered sugar
  • ½ teaspoon cinnamon, (optional)
  • 6 graham crackers or 12 ginger snap cookies, crushed

Instructions

  1.  In a large bowl, use an electric mixer to whisk the softened cream cheese and Tenayo Mole Rojo Sauce until smooth. Add the brown sugar, vanilla, and a pinch of salt. Mix until well combined.
  2. In a separate bowl, use the electric mixer again to whisk together the heavy whipping cream, powdered sugar, and cinnamon (if using) until stiff peaks form.
  3. In each glass, start layering the parfait. Begin with a layer of pumpkin mousse, followed by a sprinkle of crushed graham crackers or ginger snaps. Add a layer of whipped cream, and for an extra kick, drizzle a thin layer of Tenayo Mole Rojo Sauce. Repeat these layers until the glasses are full.
  4. Serve immediately and enjoy!
