Ingredients
- ¼ cup Tenayo Mole Rojo Sauce, plus extra for garnish
- 8 oz cream cheese, softened to room temperature
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup heavy whipping cream
- ⅓ cup powdered sugar
- ½ teaspoon cinnamon, (optional)
- 6 graham crackers or 12 ginger snap cookies, crushed
Instructions
- In a large bowl, use an electric mixer to whisk the softened cream cheese and Tenayo Mole Rojo Sauce until smooth. Add the brown sugar, vanilla, and a pinch of salt. Mix until well combined.
- In a separate bowl, use the electric mixer again to whisk together the heavy whipping cream, powdered sugar, and cinnamon (if using) until stiff peaks form.
- In each glass, start layering the parfait. Begin with a layer of pumpkin mousse, followed by a sprinkle of crushed graham crackers or ginger snaps. Add a layer of whipped cream, and for an extra kick, drizzle a thin layer of Tenayo Mole Rojo Sauce. Repeat these layers until the glasses are full.
