Ingredients
- 2 cups leftover cooked turkey, shredded or diced
- ½ cup Tenayo Al Pastor Barbecue Sauce, plus more for topping
- ¼ cup mayonnaise
- 1 celery stalk, finely chopped
- 1 small red onion or large shallot, finely chopped
- 1 tablespoon fresh parsley, chopped (optional)
- Salt and pepper to taste
- 4 buns, toasted
Instructions
- In a large bowl, mix together the shredded turkey, Tenayo Al Pastor Barbecue Sauce, and mayonnaise. Stir in the chopped celery, red onion, and parsley. Season with salt and pepper to taste.
- Lightly toast the buns until golden brown then spoon the turkey salad mixture onto the bottom half of each bun. Top with additional Tenayo Al Pastor Barbecue Sauce if desired. Place the top half of the bun on each sandwich.
- Serve immediately, or refrigerate and enjoy later!
