Slow Cooked Pot Roast

Ingredients

  • 1 cup Tenayo Al Pastor Barbecue Sauce
  • 2 to 3 pounds pork roast (shoulder or butt)
  • Salt and pepper to taste
  • 4 medium potatoes, diced
  • 3 large carrots, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 4 cups chicken or vegetable broth

Instructions

  1. Season the pork roast with salt and pepper on all sides, then brush with Tenayo Al Pastor Barbeque Sauce.
  2. Place the diced potatoes, sliced carrots, and sliced mushrooms in the bottom of a slow cooker. Lay the pork roast on top of the vegetables.
  3. Add the chicken or vegetable broth around the sides of the roast. Sprinkle the chopped rosemary on top.
  4. Cover the slow cooker and cook on low for 6 hours or on high for 4 hours, until the pork is tender and easily shreds with a fork.
  5. Once cooked, shred the pork and mix it with the vegetables and sauce. Serve warm, garnished with additional rosemary if desired.
